Wait, what?! Yup, that crown of raw broccoli will give you almost NO folate, but cook it and wallah. Use an app like Cronometer to see the nutritional content of your food (or use 'the google'.) Here's a list of fun facts that I've found (sometimes the hard way) and I'll continue to add to as I learn:
Those Blanched Almonds - no more Vitamin E left. If you're looking for the Vitamin E in your Almonds, eat them raw.
Cooking Broccoli brings out the Folate
The Fiber value of a food does NOT change even if you grind it up. You get the same value either way - coffee is a great example.
Blending your food into a smoothie doesn't change the nutritional value, but you may feel less satiated and eat more calories.
